5 minute Sticky Date Pudding with banana nice-cream.

Makes 2

Ingredients (for each mug):

4 medjool dates, roughly chopped
3 tbsp boiling Water
1/8 tsp bi-carb Soda
1 Tbsp rice malt syrup
1 tbs psyllium husk
1 tbs ground flax seeds
1 tbs ground buckwheat

Basic Caramel Sauce (for both mugs):
6 dates
1/2 cup coconut cream


In each mug place the chopped dates and water. Place in microwave for 50 sec until the dates are softened. Add the bi-carb soda and let it sit for 30 sec and mash roughly with a spoon. Add the sugar and dry ingredients and mix to combine thoroughly. Flatten the top of the mixture. Place in the microwave for 1 minute. It may need a further 10-20 sec to finish it off completely, depending on your microwave.

Basic Caramel Sauce: In an ovenproof ramekin add the dates and cream and place in the microwave for 40 seconds. Remove and stir and repeat another four times. Mash. You will end up with a dark caramel sauce. Drizzle over the sticky date pudding, serve with banana nice-cream (here) and enjoy!


1 frozen banana
1/4c almond milk
1/2tsp vanilla extract
(Optional tbs peanut butter)
Combine all in a blender until ice-cream consistency, serve with pudding and sauce.
