Buckwheat pancakes with avocado salsa, wilted spinach and hummus.

Pancakes:
Ingredients:

1 cup raw buckwheat (grind into flour) or buckwheat flour
1/2 cup or so of almond milk (add until pancake consistency)
Sprinkle of turmeric (great for inflammation)
Sprinkle of cumin

Method:
Mix all ingredients together.
Cook in pan on medium heat until brown.
Topping:
One tomato and 1/2 avocado diced – mix together.
2 tbs Home made hummus (here)
Handful of spinach wilted in a pan with a bit of water for a few minutes.

Addition: Add ¼ large red capsicum and ¼ red onion diced with pancake ingredients into a blender, blend on high until combined.
