3 tbs water
1 medium sized cauliflower, broken into florets
1 medium bunch of broccoli, broken into florets
2 medium sized onions, roughly chopped
3 garlic cloves, roughly chopped
5 cups of water and 2 tbs of ‘no salt seasoning’ or no added salt vegetable stock
1 cup coconut or almond milk (or milk of choice)
- Heat water in a large non-stick pot, adding onion and garlic. Cook for a few minutes until clear. Add the cauliflower and allow it to brown. Cover with stock and bring to the boil.
- Reduce the heat and cook for 30 minutes until the cauliflower and broccoli become very soft and break up easily.
- Use a stick blender to create a smooth consistency. Place back onto the heat and add milk.
- Serve with life changing loaf of bread. Garnish with salt and pepper.
