Cauliflower Soup

Ingredients:

3 tbs water

1 medium sized cauliflower, 
broken into florets

1 medium bunch of broccoli, broken into florets

2 medium sized onions, roughly chopped

3 garlic cloves, roughly chopped

5 cups of water and 2 tbs of  ‘no salt seasoning’ or no added salt vegetable stock

1 cup coconut or almond milk 
(or milk of choice)

 

Method:

  1. Heat water in a large non-stick pot, adding onion
and garlic. Cook for a few minutes until clear. Add the cauliflower and allow it to brown. Cover with stock and bring to the boil.
  2. Reduce the heat and cook for 30 minutes until the cauliflower and broccoli become very soft and break up easily.
  3. Use a stick blender to create a smooth consistency. Place back onto the heat and add milk.
  4. Serve with life changing loaf of bread. Garnish with salt and pepper.
