Chilli Dukka Eggplant and sweet potato fritters


1/2 small eggplant
1 small sweet potato
1 chia egg
1/2c  buckwheat flour
1 tbs of chili Dukka (chilli, other spices/herbs you desire)

  1. Cook in a non-stick frying pan until brown.
  2. Top with avocado and tomato salsa and hummus.


Addition: Not a fan of eggplant – use zucchini or just sweet potato.
