Chocolate and goji balls

Ingredients:

2 scoops chocolate powder*

1⁄4 cup coconut

6 medjool dates (soaked in 3 tbs boiling water – do not drain)

Handful of goji berries

1 Tbs unhulled tahini

Optional: increase liquids and add 1⁄2 cup almond meal

Add more water if needed.

 

Method:

  1. Pop all the ingredients in a food processor and blitz until combined into a crumbly mixture.
  2. Pour the mixture into a mixing bowl and grab roughly 1 tablespoon of mixture and roll into a ball with your hands
  3. Roll ball into the coconut to coat
  4. Store in the fridge.
