Kale, Potato & Beetroot Hummus Salad

I came up with this one, as I had not had enough time to make my own bread, and this is what I had at home. I love experimenting. It was delish!

 

Ingredients:

2 handfuls of kale

Sprinkle of lemon juice

Sprinkle of apple cider vinegar

1 small potato (of your choice)

1 tbs of sauerkraut

2tbs of beetroot hummus

Handful of activated almonds

 

Optional add ins: a handful of chickpeas, olives, capsicum, etc.

 

Directions:

  1. Rinse then chop potato into large wedges. Microwave for 5 minutes on a plate.
  2. Massage your kale in the lemon juice and apple cider vinegar until it becomes soft.
  3. Add the potato to the kale, top with the sauerkraut, almonds, hummus etc.
