2 cups of organic oats (naturally no/low gluten)
2 cups of vegan vanilla protein powder (or substitute a 1/4 with protein boost) (I choose Arbonne’s)
5 dates soaked in 1 cup of warm water in a blender, then blend into a syrup
1 tsp of vanilla bean paste
2 tbs of tahini
Rind of 1 lemon
Juice of 2 lemons
1. Combine all ingredients in a bowl until a dough forms.
2. Press into a lined baking tray and refrigerate for 30 minutes.
3. Cut in half then slice into 16 pieces (I cut in halves until I have 16 pieces)
4. Enjoy with a cup of herbal tea 🙂
