Satay Vegetable Stir Fry

INGREDIENTS:

1/2 cup natural peanut butter
1/2 tin coconut milk
Splash of tamari sauce
2 tbs curry powder
1 garlic glove
Half an onion, diced
Vegetables of choice: 1 small sweet potato and 2 carrots (steamed for 2 minutes before), 1 bunch of broccoli, 4 large handfuls of beans.

 

DIRECTIONS:

1. Brown onion and garlic in water in a pan until soft
2. Add vegetables of choice
3. Add sauce ingredients and stir
4. Cook for 5 minutes, until vegetables are warm but still crunchy (or cooked to liking)
