Spicy Baked Beans.

Ingredients:

450g cannellini or borlotti beans (soaked, rinsed, drained & cooked prior)
1 tin tomatoes
2 cloves garlic
½ tsp chilli flakes
1 tsp cumin
1 tsp paprika

Optional: 1 tbsp coriander leaves.

 

Method:

  1. Sauté the garlic and chilli flakes until aromatic.
  2. Add the beans followed by the chopped tomatoes and paprika. Let it simmer over low-medium heat until slightly thickens, covered.
  3. Add chopped coriander and continue to simmer for a minute or so.
  4. Serve on the life changing bread recipe (here) with wilted greens (spinach or kale).
