Sweet Potato Fritters with Avocado Salsa 

Prep Time:                30 minutes

Cooking Time:          15 minutes

Yields:                         2 people


1 -1 ½ C sweet potato, grated

1 small zucchini (optional – double sweet potato if removed)

3 chia eggs

¼ C buckwheat flour

2-3 spring onions

Salt and pepper to taste

1  avocado

5 cherry tomatoes/1 large tomato, chopped finely

1 lemon juiced

2 crushed garlic gloves

1 bunch basil, finely chopped



Grate the sweet potato and zucchini

Cut the spring onion into thin slices

Mix the sweet potato, zucchini, spring onions, eggs, flour, salt and pepper together

Take 1 large handful of mixture, flatten and cook on medium heat on each side until brown

Mix the avocado, tomato, lemon, garlic and basil together and serve with the fritters.
