Sweet Potato Nachos

Ingredients:

1 sweet potato

1 corncob cooked

1 cup mixed beans, cooked

½ jalapeno sliced

 

Salsa:

1/2 avocado

1 tomato

 

Method:

Thinly slice sweet potato and dry roast/grill (or use a frying pan with minimal olive oil to fry) for 20mins until crispy… Add your choice of topping: corn, red kidney beans, black beans, avocado and tomato salsa, jalapeños, re-friend bean curd (and ‘cheese’ for some). Grill for 5 minutes.
