Vegan Coleslaw & Potato Salad

COLESLAW
Ingredients
  • 1/2 bunch of kale (optional)
  • 1/2 cabbage
  • 4 carrots, peeled
  • 2 pink lady apples
  • 1/2 red onion thinly sliced (optional)
  • 6 Tbs tahini
  • 3 Tbs Dijon mustard
  • 6 Tbl apple cider vinegar
Directions
  1. Shred your kale and cabbage into a large bowl (you can use a food processor or slice them thinly).
  2. Grate the carrots, apple and onion and add to the kale and cabbage. Mix together.
  3. In a medium size bowl combine the tahini, mustard and vinegar, stir until everything is well combined and creamy.
  4. Add 1/2 of the dressing into the veggie/fruit mix and massage until as creamy as you want it! Continue adding the dressing to your liking. Serve Immediately.

POTATO SALAD
Ingredients
  • 6 large potatoes, diced into 3 cm cubes (roughly)
  • 1/2 brown onion, diced
  • 6 Tbs tahini
  • 3 Tbs Dijon mustard (or seeded mustard)
  • 6 Tbl apple cider vinegar
  • 1/4 cup of fresh parsley, corriander, basil or other herbs
Directions
  1. Boil the potatoes on high, until cooked, but still firm. About 10 minutes.
  2. Lightly cook the onions in a pan with water, until translucent and soft.
  3. Mix the tahini, mustard and vinegar in a medium bowl until creamy.
  4. Add the potato, dressing and onion into a large bowl. Mix until combined.
  5. Top with parsley etc.
