Serves 4
Ingredients:
1 bag of frozen berries
2 scoops of vanilla protein (optional – use more dry ingredients if omitted)
1tsp cinnamon
1/4 cup of chia seeds
1/4 cup flax seeds
1 cup almonds
1 cup desiccated coconut
2 tbs coconut oil
2 tbs water
2 tbs of liquid sweetener (rice malt, maple syrup, coconut syrup etc)
Directions:
1. Preheat oven to 180C
2. Place the frozen berries in a round baking dish.
3. Combine the rest of the dry ingredients in a blender on medium for 30 seconds, until it resembles crumbs.
4. Add wet ingredients and then test consistency with hands. It should stick together when pressed hard (but not be too wet).
5. Place crumble mixture on top of berries. Place in oven for 20 mins. Cover with foil and cook for another 20 mins.
Enjoy with a tbs of coconut yoghurt for breakfast, lunch, dinner or dessert.
